Happy Cinco De Mayo, y’all! Today’s the day that Mexican-Americans celebrate their heritage, and all Americans celebrate the contributions Mexicans and Mexican-Americans have made to the American culture. Not to be confused with Mexico’s Independence Day, which is in September, this day also commemorates the 1862 Battle of Puebla.
We always have Mexican food, one of our favorite types of food, on Cinco De Mayo, either at home or at a Mexican restaurant.
Last year, I was planning an at-home meal for the holiday, and scanned the web for a quick, easy dessert with Mexican flavors. I kept finding that most Mexican desserts included either chocolate or cinnamon, or both. Since I couldn’t find anything as quick and easy as I was looking for, I created this dessert myself – out of sheer laziness, yes – but wow is it delicious!
- Dulce De Leche ice cream
- Chocolate syrup (like you use to make chocolate milk)
- Cinnamon (organic is best – the flavor difference is amazing)
That’s it! See? I said it was easy! Mmmm, you could always top it off with a bit of whipped cream, too…
That cute little cactus glass came from the dollar store, and I’ll bet you can find some, too. Try looking for them online if you can’t find them locally and really want some. They’re, no doubt, intended for margaritas, but they’re perfect for serving this quick, easy ice cream dessert.
